Recipe of the month: Chocolate Energy Bites

Chocolate Energy Bites

Ingredients

1 cup old-fashioned oats (you can use Gluten-free if you want)

1/3 cup ground flax-seeds

1/4 unsweetened cocoa powder

1 tablespoon chia seeds

1/2 cup peanut butter or other nut butter

1/3 cup honey

1 teaspoon vanilla extract

OPTIONAL – 1/3 cup mini chocolate chips (I find them sweet enough)

1-3 tablespoon liquid if needed to form balls (almond milk, milk, coconut milk, or water)

Instructions

  1. Mix all the ingredients thoroughly in a medium bowl. Cover and chill for at least 45 minutes in the fridge to make mixture easier to shape.
  2. Once chilled, roll into balls any size you’d prefer. If mixture is too crumbly, add more peanut butter or honey. If it’s too runny (possible if you used natural nut butter) add more oats! Keep in airtight container in the fridge.

They stay fresh for a week or so. They last quite a well; they just taste better the more fresh!
