Recipe of the Month for April

HOMEMADE BOLOGNESE SAUCE INGREDIENTS 2 TEASPOONS OLIVE OIL 2 CLOVES GARLIC, CHOPPED 2 ONIONS, CHOPPED 1KG MINCED BEEF 2 X 400G CANS TOMATO PUREE 1 CUP (250ML) BEEF STOCK ¼ CUP CHOPPED FLAT-LEAF PARSLEY LEAVES EA SALT AND CRACKED BLACK PEPPER METHOD Heat a deep frying pan or saucepan over high heat. Add the oil, garlic and onion and cook for 3 minutes or until just soft. Add the mince and cook, stirring, until brown. Add the tomato puree and stock and rapidly simmer for 10–15 minutes or until thickened to your liking. Stir through the parsley, salt and pepper and serve over spaghetti or use as sauce in a lasagna. Serves 4.

Lazy Days Spaghetti Squash Bowl Prep Time 5 minutes Cook Time 40 minutes Total Time 45 minutes Servings 2 large portions or 4 side dishes INGREDIENTS 1 spaghetti squash 2 Tbsp olive oil divided 1 cup chopped broccoli 3 Tbsp water 3 cups fresh spinach 4 Tbsp pesto or to taste 4 oz feta cheese cubed INSTRUCTIONS Cut spaghetti squash in half lengthwise and scoop out seeds and gunk around seeds. Brush with 1 Tbsp olive oil and place face down on a baking sheet. Bake at 375 degrees F for 40 minutes, or until tender. Squash is done when “noodles” easily fall away when gently raked with a fork. Because we are using the squash as its own bowl, be careful not to rake too far into the skin of the squash. Boil until broccoli is slightly tender.
